Seafood and Green Onion Pancake (Haemul Pajeon) Recipe:

This savory Korean pancake is packed with flavor from fresh seafood and green onions, and makes a delicious appetizer or light meal.

Ingredients:

Batter:

1 cup all-purpose flour 1 tablespoon potato starch 1/2 teaspoon salt 1/2 teaspoon black pepper 3/4 cup cold water or ice-cold water 1 egg, beaten Fillings: 12 green onions, white and green parts, roughly chopped 4-5 ounces (1/2 cup) seafood mix (such as shrimp, squid, clams), chopped 1 red chili pepper, thinly sliced (optional) 1 tablespoon vegetable oil Sauce (optional): 1/4 cup soy sauce 1 tablespoon rice vinegar 1 teaspoon sesame oil 1 clove garlic, minced

Instructions:

Make the batter: In a large bowl, whisk together flour, potato starch, salt, and pepper. Gradually whisk in cold water until a smooth batter forms. Stir in the beaten egg.

Prepare the fillings: Chop the green onions, seafood mix, and chili pepper (if using).

Heat a pan: Heat a large non-stick pan or cast iron skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the bottom of the pan.

Cook the pancake: Pour about 1/3 of the batter into the pan, tilting the pan to spread it evenly. Arrange half of the green onions on top of the batter. Sprinkle half of the seafood mix over the green onions. If using, top with half of the chili pepper slices.

Cook for 2-3 minutes: Let the pancake cook until the bottom is golden brown and crispy.

Flip and cook: Carefully flip the pancake using a spatula. Pour another 1-2 tablespoons of batter around the edges of the pancake to fill any gaps. Press down gently on the filling to help it stick to the pancake. Cook for another 2-3 minutes, or until the other side is golden brown and crispy.

Repeat: Repeat steps 4-6 with the remaining batter, green onions, seafood mix, and chili pepper.

Serve: Cut the pancake into wedges and serve immediately with your desired sauce for dipping, such as a simple soy sauce mixture or a Korean dipping sauce made with soy sauce, rice vinegar, sesame oil, and garlic.

Tips:

For a crispy pancake, make sure the oil is hot before adding the batter.

Use a variety of seafood in your mix, such as shrimp, squid, scallops, mussels, or clams.

You can also add other vegetables to the pancake, such as shredded carrots, cabbage, or kimchi.

If you don't have potato starch, you can substitute with cornstarch.

Adjust the amount of chili pepper to your desired spice level.
